It would risk collapsing, slipping below ground… consequently, our chefs are attached to their garden like a life-jacket – something that is crucial for survival. Hotel Bellevue’s circular kitchen garden split into wedges is very distinctive and is looked after with great passion by our Maître Fromager,  Roberto. This garden ensures that our guests are served truly locally sourced vegetables and aromatic plants. To perfect their art, the chefs and bar tenders use the freshest possible medicinal herbs.
