In the Alps cheese has pride of place both in the kitchen and on the table. At Hôtel Bellevue we age cheeses in our cool and humid grotto-cellar, the ideal environment for maturing the outstanding raw milk cheeses from the western Alps. Roberto, our cheese waiter, brushes the forms regularly and takes care of them with all the love and passion these domestic treasures deserve.
